Food. What we eat, and how we grow it, will be fundamentally transformed in the next decade.

Already, indoor farming is projected to be a US$40.25 billion industry by 2022, with a compound annual growth rate of 9.65 percent. Meanwhile, the food 3D printing industry is expected to grow at an even higher rate, averaging 50 percent annual growth.

And converging exponential technologies—from materials science to AI-driven digital agriculture—are not slowing down. Today’s breakthroughs will soon allow our planet to boost its food production by nearly 70 percent, using a fraction of the real estate and resources, to feed 9 billion by mid-century.

What you consume, how it was grown, and how it will end up in your stomach will all ride the wave of converging exponentials, revolutionizing the most basic of human needs.

Printing Food
3D printing has already had a profound impact on the manufacturing sector. We are now able to print in hundreds of different materials, making anything from toys to houses to organs. However, we are finally seeing the emergence of 3D printers that can print food itself.

Redefine Meat, an Israeli startup, wants to tackle industrial meat production using 3D printers that can generate meat, no animals required. The printer takes in fat, water, and three different plant protein sources, using these ingredients to print a meat fiber matrix with trapped fat and water, thus mimicking the texture and flavor of real meat.

Slated for release in 2020 at a cost of $100,000, their machines are rapidly demonetizing and will begin by targeting clients in industrial-scale meat production.

Anrich3D aims to take this process a step further, 3D printing meals that are customized to your medical records, heath data from your smart wearables, and patterns detected by your sleep trackers. The company plans to use multiple extruders for multi-material printing, allowing them to dispense each ingredient precisely for nutritionally optimized meals. Currently in an R&D phase at the Nanyang Technological University in Singapore, the company hopes to have its first taste tests in 2020.

These are only a few of the many 3D food printing startups springing into existence. The benefits from such innovations are boundless.

Not only will food 3D printing grant consumers control over the ingredients and mixtures they consume, but it is already beginning to enable new innovations in flavor itself, democratizing far healthier meal options in newly customizable cuisine categories.

Vertical Farming
Vertical farming, whereby food is grown in vertical stacks (in skyscrapers and buildings rather than outside in fields), marks a classic case of converging exponential technologies. Over just the past decade, the technology has surged from a handful of early-stage pilots to a full-grown industry.

Today, the average American meal travels 1,500-2,500 miles to get to your plate. As summed up by Worldwatch Institute researcher Brian Halweil, “We are spending far more energy to get food to the table than the energy we get from eating the food.” Additionally, the longer foods are out of the soil, the less nutritious they become, losing on average 45 percent of their nutrition before being consumed.

Yet beyond cutting down on time and transportation losses, vertical farming eliminates a whole host of issues in food production. Relying on hydroponics and aeroponics, vertical farms allows us to grow crops with 90 percent less water than traditional agriculture—which is critical for our increasingly thirsty planet.

Currently, the largest player around is Bay Area-based Plenty Inc. With over $200 million in funding from Softbank, Plenty is taking a smart tech approach to indoor agriculture. Plants grow on 20-foot-high towers, monitored by tens of thousands of cameras and sensors, optimized by big data and machine learning.

This allows the company to pack 40 plants in the space previously occupied by 1. The process also produces yields 350 times greater than outdoor farmland, using less than 1 percent as much water.

And rather than bespoke veggies for the wealthy few, Plenty’s processes allow them to knock 20-35 percent off the costs of traditional grocery stores. To date, Plenty has their home base in South San Francisco, a 100,000 square-foot farm in Kent, Washington, an indoor farm in the United Arab Emirates, and recently started construction on over 300 farms in China.

Another major player is New Jersey-based Aerofarms, which can now grow two million pounds of leafy greens without sunlight or soil.

To do this, Aerofarms leverages AI-controlled LEDs to provide optimized wavelengths of light for each plant. Using aeroponics, the company delivers nutrients by misting them directly onto the plants’ roots—no soil required. Rather, plants are suspended in a growth mesh fabric made from recycled water bottles. And here too, sensors, cameras, and machine learning govern the entire process.

While 50-80 percent of the cost of vertical farming is human labor, autonomous robotics promises to solve that problem. Enter contenders like Iron Ox, a firm that has developed the Angus robot, capable of moving around plant-growing containers.

The writing is on the wall, and traditional agriculture is fast being turned on its head.

Materials Science
In an era where materials science, nanotechnology, and biotechnology are rapidly becoming the same field of study, key advances are enabling us to create healthier, more nutritious, more efficient, and longer-lasting food.

For starters, we are now able to boost the photosynthetic abilities of plants. Using novel techniques to improve a micro-step in the photosynthesis process chain, researchers at UCLA were able to boost tobacco crop yield by 14-20 percent. Meanwhile, the RIPE Project, backed by Bill Gates and run out of the University of Illinois, has matched and improved those numbers.

And to top things off, The University of Essex was even able to improve tobacco yield by 27-47 percent by increasing the levels of protein involved in photo-respiration.

In yet another win for food-related materials science, Santa Barbara-based Apeel Sciences is further tackling the vexing challenge of food waste. Now approaching commercialization, Apeel uses lipids and glycerolipids found in the peels, seeds, and pulps of all fruits and vegetables to create “cutin”—the fatty substance that composes the skin of fruits and prevents them from rapidly spoiling by trapping moisture.

By then spraying fruits with this generated substance, Apeel can preserve foods 60 percent longer using an odorless, tasteless, colorless organic substance.

And stores across the US are already using this method. By leveraging our advancing knowledge of plants and chemistry, materials science is allowing us to produce more food with far longer-lasting freshness and more nutritious value than ever before.

Convergence
With advances in 3D printing, vertical farming, and materials sciences, we can now make food smarter, more productive, and far more resilient.

By the end of the next decade, you should be able to 3D print a fusion cuisine dish from the comfort of your home, using ingredients harvested from vertical farms, with nutritional value optimized by AI and materials science. However, even this picture doesn’t account for all the rapid changes underway in the food industry.

#435824 A Q&A with Cruise’s head of AI, ...

In 2016, Cruise, an autonomous vehicle startup acquired by General Motors, had about 50 employees. At the beginning of 2019, the headcount at its San Francisco headquarters—mostly software engineers, mostly working on projects connected to machine learning and artificial intelligence—hit around 1000. Now that number is up to 1500, and by the end of this year it’s expected to reach about 2000, sprawling into a recently purchased building that had housed Dropbox. And that’s not counting the 200 or so tech workers that Cruise is aiming to install in a Seattle, Wash., satellite development center and a handful of others in Phoenix, Ariz., and Pasadena, Calif.

Cruise’s recent hires aren’t all engineers—it takes more than engineering talent to manage operations. And there are hundreds of so-called safety drivers that are required to sit in the 180 or so autonomous test vehicles whenever they roam the San Francisco streets. But that’s still a lot of AI experts to be hiring in a time of AI engineer shortages.

Hussein Mehanna, head of AI/ML at Cruise, says the company’s hiring efforts are on track, due to the appeal of the challenge of autonomous vehicles in drawing in AI experts from other fields. Mehanna himself joined Cruise in May from Google, where he was director of engineering at Google Cloud AI. Mehanna had been there about a year and a half, a relatively quick career stop after a short stint at Snap following four years working in machine learning at Facebook.

Mehanna has been immersed in AI and machine learning research since his graduate studies in speech recognition and natural language processing at the University of Cambridge. I sat down with Mehanna to talk about his career, the challenges of recruiting AI experts and autonomous vehicle development in general—and some of the challenges specific to San Francisco. We were joined by Michael Thomas, Cruise’s manager of AI/ML recruiting, who had also spent time recruiting AI engineers at Google and then Facebook.

IEEE Spectrum: When you were at Cambridge, did you think AI was going to take off like a rocket?

Mehanna: Did I imagine that AI was going to be as dominant and prevailing and sometimes hyped as it is now? No. I do recall in 2003 that my supervisor and I were wondering if neural networks could help at all in speech recognition. I remember my supervisor saying if anyone could figure out how use a neural net for speech he would give them a grant immediately. So he was on the right path. Now neural networks have dominated vision, speech, and language [processing]. But that boom started in 2012.

I didn’t [expect it], but I certainly aimed for it when [I was at] Microsoft, where I deliberately pushed my career towards machine learning instead of big data, which was more popular at the time. And [I aimed for it] when I joined Facebook.

In the early days, Facebook wasn’t that open to PhDs, or researchers. It actually had a negative sentiment about researchers. And then Facebook shifted to becoming one of the key places where PhD students wanted to do internships or join after they graduated. It was a mindset shift, they were [once] at a point in time where they thought what was needed for success wasn’t research, but now it’s different.

There was definitely an element of risk [in taking a machine learning career path], but I was very lucky, things developed very fast.

IEEE Spectrum: Is it getting harder or easier to find AI engineers to hire, given the reported shortages?

Mehanna: There is a mismatch [between job openings and qualified engineers], though it is hard to quantify it with numbers. There is good news as well: I see a lot more students diving deep into machine learning and data in their [undergraduate] computer science studies, so it’s not as bleak as it seems. But there is massive demand in the market.

Here at Cruise, demand for AI talent is just growing and growing. It might be is saturating or slowing down at other kinds of companies, though, [which] are leveraging more traditional applications—ad prediction, recommendations—that have been out there in the market for a while. These are more mature, better understood problems.

I believe autonomous vehicle technologies is the most difficult AI problem out there. The magnitude of the challenge of these problems is 1000 times more than other problems. They aren’t as well understood yet, and they require far deeper technology. And also the quality at which they are expected to operate is off the roof.

The autonomous vehicle problem is the engineering challenge of our generation. There’s a lot of code to write, and if we think we are going to hire armies of people to write it line by line, it’s not going to work. Machine learning can accelerate the process of generating the code, but that doesn’t mean we aren’t going to have engineers; we actually need a lot more engineers.

Sometimes people worry that AI is taking jobs. It is taking some developer jobs, but it is actually generating other developer jobs as well, protecting developers from the mundane and helping them build software faster and faster.

IEEE Spectrum: Are you concerned that the demand for AI in industry is drawing out the people in academia who are needed to educate future engineers, that is, the “eating the seed corn” problem?

Mehanna: There are some negative examples in the industry, but that’s not our style. We are looking for collaborations with professors, we want to cultivate a very deep and respectful relationship with universities.

And there’s another angle to this: Universities require a thriving industry for them to thrive. It is going to be extremely beneficial for academia to have this flourishing industry in AI, because it attracts more students to academia. I think we are doing them a fantastic favor by building these career opportunities. This is not the same as in my early days, [when] people told me “don’t go to AI; go to networking, work in the mobile industry; mobile is flourishing.”

IEEE Spectrum: Where are you looking as you try to find a thousand or so engineers to hire this year?

Thomas: We look for people who want to use machine learning to solve problems. They can be in many different industries—in the financial markets, in social media, in advertising. The autonomous vehicle industry is in its infancy. You can compare it to mobile in the early days: When the iPhone first came out, everyone was looking for developers with mobile experience, but you weren’t going to find them unless you went to straight to Apple, [so you had to hire other kinds of engineers]. This is the same type of thing: it is so new that you aren’t going to find experts in this area, because we are all still learning.

“You don’t have to be an autonomous vehicle expert to flourish in this world. It’s not too late to move…now would be a great time for AI experts working on other problems to shift their attention to autonomous vehicles.”

Mehanna: Because autonomous vehicle technology is the new frontier for AI experts, [the number of] people with both AI and autonomous vehicle experience is quite limited. So we are acquiring AI experts wherever they are, and helping them grow into the autonomous vehicle area. You don’t have to be an autonomous vehicle expert to flourish in this world. It’s not too late to move; even though there is a lot of great tech developed, there’s even more innovation ahead, so now would be a great time for AI experts working on other problems or applications to shift their attention to autonomous vehicles.

It feels like the Internet in 1980. It’s about to happen, but there are endless applications [to be developed over] the next few decades. Even if we can get a car to drive safely, there is the question of how can we tune the ride comfort, and then applying it all to different cities, different vehicles, different driving situations, and who knows to what other applications.

I can see how I can spend a lifetime career trying to solve this problem.

IEEE Spectrum: Why are you doing most of your development in San Francisco?

Mehanna: I think the best talent of the world is in Silicon Valley, and solving the autonomous vehicle problem is going to require the best of the best. It’s not just the engineering talent that is here, but [also] the entrepreneurial spirit. Solving the problem just as a technology is not going to be successful, you need to solve the product and the technology together. And the entrepreneurial spirit is one of the key reasons Cruise secured 7.5 billion in funding [besides GM, the company has a number of outside investors, including Honda, Softbank, and T. Rowe Price]. That [funding] is another reason Cruise is ahead of many others, because this problem requires deep resources.

“If you can do an autonomous vehicle in San Francisco you can do it almost anywhere.”

[And then there is the driving environment.] When I speak to my peers in the industry, they have a lot of respect for us, because the problems to solve in San Francisco technically are an order of magnitude harder. It is a tight environment, with a lot of pedestrians, and driving patterns that, let’s put it this way, are not necessarily the best in the nation. Which means we are seeing more problems ahead of our competitors, which gets us to better [software]. I think if you can do an autonomous vehicle in San Francisco you can do it almost anywhere.

#435806 Boston Dynamics’ Spot Robot Dog ...

Boston Dynamics is announcing this morning that Spot, its versatile quadruped robot, is now for sale. The machine’s animal-like behavior regularly electrifies crowds at tech conferences, and like other Boston Dynamics’ robots, Spot is a YouTube sensation whose videos amass millions of views.

Now anyone interested in buying a Spot—or a pack of them—can go to the company’s website and submit an order form. But don’t pull out your credit card just yet. Spot may cost as much as a luxury car, and it is not really available to consumers. The initial sale, described as an “early adopter program,” is targeting businesses. Boston Dynamics wants to find customers in select industries and help them deploy Spots in real-world scenarios.

“What we’re doing is the productization of Spot,” Boston Dynamics CEO Marc Raibert tells IEEE Spectrum. “It’s really a milestone for us going from robots that work in the lab to these that are hardened for work out in the field.”

Boston Dynamics has always been a secretive company, but last month, in preparation for launching Spot (formerly SpotMini), it allowed our photographers into its headquarters in Waltham, Mass., for a special shoot. In that session, we captured Spot and also Atlas—the company’s highly dynamic humanoid—in action, walking, climbing, and jumping.

Who can buy a Spot?
If you’re interested in one, you should go to Boston Dynamics’ website and take a look at the information the company requires from potential buyers. Again, the focus is on businesses. Boston Dynamics says it wants to get Spots out to initial customers that “either have a compelling use case or a development team that we believe can do something really interesting with the robot,” says VP of business development Michael Perry. “Just because of the scarcity of the robots that we have, we’re going to have to be selective about which partners we start working together with.”

What can Spot do?
As you’ve probably seen on the YouTube videos, Spot can walk, trot, avoid obstacles, climb stairs, and much more. The robot’s hardware is almost completely custom, with powerful compute boards for control, and five sensor modules located on every side of Spot’s body, allowing it to survey the space around itself from any direction. The legs are powered by 12 custom motors with a reduction, with a top speed of 1.6 meters per second. The robot can operate for 90 minutes on a charge. In addition to the basic configuration, you can integrate up to 14 kilograms of extra hardware to a payload interface. Among the payload packages Boston Dynamics plans to offer are a 6 degrees-of-freedom arm, a version of which can be seen in some of the YouTube videos, and a ring of cameras called SpotCam that could be used to create Street View–type images inside buildings.

How do you control Spot?
Learning to drive the robot using its gaming-style controller “takes 15 seconds,” says CEO Marc Raibert. He explains that while teleoperating Spot, you may not realize that the robot is doing a lot of the work. “You don’t really see what that is like until you’re operating the joystick and you go over a box and you don’t have to do anything,” he says. “You’re practically just thinking about what you want to do and the robot takes care of everything.” The control methods have evolved significantly since the company’s first quadruped robots, machines like BigDog and LS3. “The control in those days was much more monolithic, and now we have what we call a sequential composition controller,” Raibert says, “which lets the system have control of the dynamics in a much broader variety of situations.” That means that every time one of Spot’s feet touches or doesn’t touch the ground, this different state of the body affects the basic physical behavior of the robot, and the controller adjusts accordingly. “Our controller is designed to understand what that state is and have different controls depending upon the case,” he says.

How much does Spot cost?
Boston Dynamics would not give us specific details about pricing, saying only that potential customers should contact them for a quote and that there is going to be a leasing option. It’s understandable: As with any expensive and complex product, prices can vary on a case by case basis and depend on factors such as configuration, availability, level of support, and so forth. When we pressed the company for at least an approximate base price, Perry answered: “Our general guidance is that the total cost of the early adopter program lease will be less than the price of a car—but how nice a car will depend on the number of Spots leased and how long the customer will be leasing the robot.”

Can Spot do mapping and SLAM out of the box?
The robot’s perception system includes cameras and 3D sensors (there is no lidar), used to avoid obstacles and sense the terrain so it can climb stairs and walk over rubble. It’s also used to create 3D maps. According to Boston Dynamics, the first software release will offer just teleoperation. But a second release, to be available in the next few weeks, will enable more autonomous behaviors. For example, it will be able to do mapping and autonomous navigation—similar to what the company demonstrated in a video last year, showing how you can drive the robot through an environment, create a 3D point cloud of the environment, and then set waypoints within that map for Spot to go out and execute that mission. For customers that have their own autonomy stack and are interested in using those on Spot, Boston Dynamics made it “as plug and play as possible in terms of how third-party software integrates into Spot’s system,” Perry says. This is done mainly via an API.

How does Spot’s API works?
Boston Dynamics built an API so that customers can create application-level products with Spot without having to deal with low-level control processes. “Rather than going and building joint-level kinematic access to the robot,” Perry explains, “we created a high-level API and SDK that allows people who are used to Web app development or development of missions for drones to use that same scope, and they’ll be able to build applications for Spot.”

What applications should we see first?
Boston Dynamics envisions Spot as a platform: a versatile mobile robot that companies can use to build applications based on their needs. What types of applications? The company says the best way to find out is to put Spot in the hands of as many users as possible and let them develop the applications. Some possibilities include performing remote data collection and light manipulation in construction sites; monitoring sensors and infrastructure at oil and gas sites; and carrying out dangerous missions such as bomb disposal and hazmat inspections. There are also other promising areas such as security, package delivery, and even entertainment. “We have some initial guesses about which markets could benefit most from this technology, and we’ve been engaging with customers doing proof-of-concept trials,” Perry says. “But at the end of the day, that value story is really going to be determined by people going out and exploring and pushing the limits of the robot.”

How many Spots have been produced?
Last June, Boston Dynamics said it was planning to build about a hundred Spots by the end of the year, eventually ramping up production to a thousand units per year by the middle of this year. The company admits that it is not quite there yet. It has built close to a hundred beta units, which it has used to test and refine the final design. This version is now being mass manufactured, but the company is still “in the early tens of robots,” Perry says.

How did Boston Dynamics test Spot?

The company has tested the robots during proof-of-concept trials with customers, and at least one is already using Spot to survey construction sites. The company has also done reliability tests at its facility in Waltham, Mass. “We drive around, not quite day and night, but hundreds of miles a week, so that we can collect reliability data and find bugs,” Raibert says.

What about competitors?
In recent years, there’s been a proliferation of quadruped robots that will compete in the same space as Spot. The most prominent of these is ANYmal, from ANYbotics, a Swiss company that spun out of ETH Zurich. Other quadrupeds include Vision from Ghost Robotics, used by one of the teams in the DARPA Subterranean Challenge; and Laikago and Aliengo from Unitree Robotics, a Chinese startup. Raibert views the competition as a positive thing. “We’re excited to see all these companies out there helping validate the space,” he says. “I think we’re more in competition with finding the right need [that robots can satisfy] than we are with the other people building the robots at this point.”

Why is Boston Dynamics selling Spot now?
Boston Dynamics has long been an R&D-centric firm, with most of its early funding coming from military programs, but it says commercializing robots has always been a goal. Productizing its machines probably accelerated when the company was acquired by Google’s parent company, Alphabet, which had an ambitious (and now apparently very dead) robotics program. The commercial focus likely continued after Alphabet sold Boston Dynamics to SoftBank, whose famed CEO, Masayoshi Son, is known for his love of robots—and profits.

Which should I buy, Spot or Aibo?
Don’t laugh. We’ve gotten emails from individuals interested in purchasing a Spot for personal use after seeing our stories on the robot. Alas, Spot is not a bigger, fancier Aibo pet robot. It’s an expensive, industrial-grade machine that requires development and maintenance. If you’re maybe Jeff Bezos you could probably convince Boston Dynamics to sell you one, but otherwise the company will prioritize businesses.

What’s next for Boston Dynamics?
On the commercial side of things, other than Spot, Boston Dynamics is interested in the logistics space. Earlier this year it announced the acquisition of Kinema Systems, a startup that had developed vision sensors and deep-learning software to enable industrial robot arms to locate and move boxes. There’s also Handle, the mobile robot on whegs (wheels + legs), that can pick up and move packages. Boston Dynamics is hiring both in Waltham, Mass., and Mountain View, Calif., where Kinema was located.

Okay, can I watch a cool video now?
During our visit to Boston Dynamics’ headquarters last month, we saw Atlas and Spot performing some cool new tricks that we unfortunately are not allowed to tell you about. We hope that, although the company is putting a lot of energy and resources into its commercial programs, Boston Dynamics will still find plenty of time to improve its robots, build new ones, and of course, keep making videos. #435119 Are These Robots Better Than You at ...

Robot technology is evolving at breakneck speed. SoftBank’s Pepper is found in companies across the globe and is rapidly improving its conversation skills. Telepresence robots open up new opportunities for remote working, while Boston Dynamics’ Handle robot could soon (literally) take a load off human colleagues in warehouses.

But warehouses and offices aren’t the only places where robots are lining up next to humans.

Toyota’s Cue 3 robot recently showed off its basketball skills, putting up better numbers than the NBA’s most accurate three-point shooter, the Golden State Warriors’ Steph Curry.

Cue 3 is still some way from being ready to take on Curry, or even amateur basketball players, in a real game. However, it is the latest member of a growing cast of robots challenging human dominance in sports.

As these robots continue to develop, they not only exemplify the speed of exponential technology development, but also how those technologies are improving human capabilities.

Meet the Contestants
The list of robots in sports is surprisingly long and diverse. There are robot skiers, tumblers, soccer players, sumos, and even robot game jockeys. Introductions to a few of them are in order.

Robot: Forpheus
Sport: Table tennis
Intro: Looks like something out of War of the Worlds equipped with a ping pong bat instead of a death ray.
Ability level: Capable of counteracting spin shots and good enough to beat many beginners.

Robot: Sumo bot
Sport: Sumo wrestling
Intro: Hyper-fast, hyper-aggressive. Think robot equivalent to an angry wasp on six cans of Red Bull crossed with a very small tank.
Ability level: Flies around the ring way faster than any human sumo. Tend to drive straight out of the ring at times.

Robot: Cue 3
Sport: Basketball
Intro: Stands at an imposing 6 foot and 10 inches, so pretty much built for the NBA. Looks a bit like something that belongs in a video game.
Ability level: A 62.5 percent three-pointer percentage, which is better than Steph Curry’s; is less mobile than Charles Barkley – in his current form.

Robot: Robo Cup Robots
Intro: The future of soccer. If everything goes to plan, a team of robots will take on the Lionel Messis and Cristiano Ronaldos of 2050 and beat them in a full 11 vs. 11 game.

The Limiting Factor
The skill level of all the robots above is impressive, and they are doing things that no human contestant can. The sumo bots’ inhuman speed is self-evident. Forpheus’ ability to track the ball with two cameras while simultaneously tracking its opponent with two other cameras requires a look at the spec sheet, but is similarly beyond human capability. While Cue 3 can’t move, it makes shots from the mid-court logo look easy.

Robots are performing at a level that was confined to the realm of science fiction at the start of the millennium. The speed of development indicates that in the near future, my national team soccer coach would likely call up a robot instead of me (he must have lost my number since he hasn’t done so yet. It’s the only logical explanation), and he’d be right to do so.

It is also worth considering that many current sports robots have a humanoid form, which limits their ability. If engineers were to optimize robot design to outperform humans in specific categories, many world champions would likely already be metallic.

Swimming is perhaps one of the most obvious. Even Michael Phelps would struggle to keep up with a torpedo-shaped robot, and if you beefed up a sumo robot to human size, human sumos might impress you by running away from them with a 100-meter speed close to Usain Bolt’s.

In other areas, the playing field for humans and robots is rapidly leveling. One likely candidate for the first head-to-head competitions is racing, where self-driving cars from the Roborace League could perhaps soon be ready to race the likes of Lewis Hamilton.

Tech Pushing Humans
Perhaps one of the biggest reasons why it may still take some time for robots to surpass us is that they, along with other exponential technologies, are already making us better at sports.

In Japan, elite volleyball players use a robot to practice their attacks. Some American football players also practice against robot opponents and hone their skills using VR.

On the sidelines, AI is being used to analyze and improve athletes’ performance, and we may soon see the first AI coaches, not to mention referees.

We may even compete in games dreamt up by our electronic cousins. SpeedGate, a new game created by an AI by studying 400 different sports, is a prime example of that quickly becoming a possibility.

However, we will likely still need to make the final call on what constitutes a good game. The AI that created SpeedGate reportedly also suggested less suitable pastimes, like underwater parkour and a game that featured exploding frisbees. Both of these could be fun…but only if you’re as sturdy as a robot.

#433911 Thanksgiving Food for Thought: The Tech ...

With the Thanksgiving holiday upon us, it’s a great time to reflect on the future of food. Over the last few years, we have seen a dramatic rise in exponential technologies transforming the food industry from seed to plate. Food is important in many ways—too little or too much of it can kill us, and it is often at the heart of family, culture, our daily routines, and our biggest celebrations. The agriculture and food industries are also two of the world’s biggest employers. Let’s take a look to see what is in store for the future.

Robotic Farms
Over the last few years, we have seen a number of new companies emerge in the robotic farming industry. This includes new types of farming equipment used in arable fields, as well as indoor robotic vertical farms. In November 2017, Hands Free Hectare became the first in the world to remotely grow an arable crop. They used autonomous tractors to sow and spray crops, small rovers to take soil samples, drones to monitor crop growth, and an unmanned combine harvester to collect the crops. Since then, they’ve also grown and harvested a field of winter wheat, and have been adding additional technologies and capabilities to their arsenal of robotic farming equipment.

Indoor vertical farming is also rapidly expanding. As Engadget reported in October 2018, a number of startups are now growing crops like leafy greens, tomatoes, flowers, and herbs. These farms can grow food in urban areas, reducing transport, water, and fertilizer costs, and often don’t need pesticides since they are indoors. IronOx, which is using robots to grow plants with navigation technology used by self-driving cars, can grow 30 times more food per acre of land using 90 percent less water than traditional farmers. Vertical farming company Plenty was recently funded by Softbank’s Vision Fund, Jeff Bezos, and others to build 300 vertical farms in China.

These startups are not only succeeding in wealthy countries. Hello Tractor, an “uberized” tractor, has worked with 250,000 smallholder farms in Africa, creating both food security and tech-infused agriculture jobs. The World Food Progam’s Innovation Accelerator (an impact partner of Singularity University) works with hundreds of startups aimed at creating zero hunger. One project is focused on supporting refugees in developing “food computers” in refugee camps—computerized devices that grow food while also adjusting to the conditions around them. As exponential trends drive down the costs of robotics, sensors, software, and energy, we should see robotic farming scaling around the world and becoming the main way farming takes place.

Cultured Meat
Exponential technologies are not only revolutionizing how we grow vegetables and grains, but also how we generate protein and meat. The new cultured meat industry is rapidly expanding, led by startups such as Memphis Meats, Mosa Meats, JUST Meat, Inc. and Finless Foods, and backed by heavyweight investors including DFJ, Bill Gates, Richard Branson, Cargill, and Tyson Foods.

Cultured meat is grown in a bioreactor using cells from an animal, a scaffold, and a culture. The process is humane and, potentially, scientists can make the meat healthier by adding vitamins, removing fat, or customizing it to an individual’s diet and health concerns. Another benefit is that cultured meats, if grown at scale, would dramatically reduce environmental destruction, pollution, and climate change caused by the livestock and fishing industries. Similar to vertical farms, cultured meat is produced using technology and can be grown anywhere, on-demand and in a decentralized way.

Similar to robotic farming equipment, bioreactors will also follow exponential trends, rapidly falling in cost. In fact, the first cultured meat hamburger (created by Singularity University faculty Member Mark Post of Mosa Meats in 2013) cost $350,000 dollars. In 2018, Fast Company reported the cost was now about $11 per burger, and the Israeli startup Future Meat Technologies predicted they will produce beef at about $2 per pound in 2020, which will be competitive with existing prices. For those who have turkey on their mind, one can read about New Harvest’s work (one of the leading think tanks and research centers for the cultured meat and cellular agriculture industry) in funding efforts to generate a nugget of cultured turkey meat.

One outstanding question is whether cultured meat is safe to eat and how it will interact with the overall food supply chain. In the US, regulators like the Food and Drug Administration (FDA) and the US Department of Agriculture (USDA) are working out their roles in this process, with the FDA overseeing the cellular process and the FDA overseeing production and labeling.

Food Processing
Tech companies are also making great headway in streamlining food processing. Norwegian company Tomra Foods was an early leader in using imaging recognition, sensors, artificial intelligence, and analytics to more efficiently sort food based on shape, composition of fat, protein, and moisture, and other food safety and quality indicators. Their technologies have improved food yield by 5-10 percent, which is significant given they own 25 percent of their market.

These advances are also not limited to large food companies. In 2016 Google reported how a small family farm in Japan built a world-class cucumber sorting device using their open-source machine learning tool TensorFlow. SU startup Impact Vision uses hyper-spectral imaging to analyze food quality, which increases revenues and reduces food waste and product recalls from contamination.

These examples point to a question many have on their mind: will we live in a future where a few large companies use advanced technologies to grow the majority of food on the planet, or will the falling costs of these technologies allow family farms, startups, and smaller players to take part in creating a decentralized system? Currently, the future could flow either way, but it is important for smaller companies to take advantage of the most cutting-edge technology in order to stay competitive.

Food Purchasing and Delivery
In the last year, we have also seen a number of new developments in technology improving access to food. Amazon Go is opening grocery stores in Seattle, San Francisco, and Chicago where customers use an app that allows them to pick up their products and pay without going through cashier lines. Sam’s Club is not far behind, with an app that also allows a customer to purchase goods in-store.

The market for food delivery is also growing. In 2017, Morgan Stanley estimated that the online food delivery market from restaurants could grow to $32 billion by 2021, from $12 billion in 2017. Companies like Zume are pioneering robot-powered pizza making and delivery. In addition to using robotics to create affordable high-end gourmet pizzas in their shop, they also have a pizza delivery truck that can assemble and cook pizzas while driving. Their system combines predictive analytics using past customer data to prepare pizzas for certain neighborhoods before the orders even come in. In early November 2018, the Wall Street Journal estimated that Zume is valued at up to $2.25 billion.

Looking Ahead
While each of these developments is promising on its own, it’s also important to note that since all these technologies are in some way digitized and connected to the internet, the various food tech players can collaborate. In theory, self-driving delivery restaurants could share data on what they are selling to their automated farm equipment, facilitating coordination of future crops. There is a tremendous opportunity to improve efficiency, lower costs, and create an abundance of healthy, sustainable food for all.

On the other hand, these technologies are also deeply disruptive. According to the Food and Agricultural Organization of the United Nations, in 2010 about one billion people, or a third of the world’s workforce, worked in the farming and agricultural industries. We need to ensure these farmers are linked to new job opportunities, as well as facilitate collaboration between existing farming companies and technologists so that the industries can continue to grow and lead rather than be displaced.

Just as importantly, each of us might think about how these changes in the food industry might impact our own ways of life and culture. Thanksgiving celebrates community and sharing of food during a time of scarcity. Technology will help create an abundance of food and less need for communities to depend on one another.
